Best Ever Pecan Pie

Serves 8

1 c Karo® Light or Dark Corn Syrup

3 eggs

1 c sugar

2 tbsp butter, melted

1 tsp pure vanilla extract

1½ c  pecans

1 (9-inch) unbaked deep-dish pie crust


In bowl beat eggs slightly. Mix in corn syrup, sugar, margarine, vanilla and salt. Stir in pecans. Pour filling into pastry shell. Bake in 400 degree oven 15 minutes, reduce heat to 350 degrees. and bake 30 to 35 minutes longer.

(Filling should be slightly less set in center than around edge.)

Cool.

Brownies

Serves 8

2 eggs, beaten

1 c sugar

1 tsp vanilla extract

⅔ c oil

2 squares chocolate, melted

1 c sifted flour

½ tsp baking powder

¾ tsp salt


Mix all well. Can add nuts, if desired. Place in 7 x 11" greased pan. Bake at 350 degrees 20-25 minutes. Cool completely.

Cut into bars, and roll each in powdered sugar.than around edge.)

Cool. 


Buster Bar Desserts

Serves 12

3 c chocolate wafer cookies

2 tbsp sugar

1c butter, melted

1½ c salted peanuts

½ gal vanilla ice cream, sliced

1½ c evaporated milk

2 c powdered sugar

¾ c semisweet chocolate chips

½ c butter

1 tsp vanilla


Crush cookies; add sugar amd melted margarine. Press into 9 X 13 " pan. Sprinkle peanuts on crust. Spread sliced ice cream over peanuts. Mix powdered sugar, milk, choc. chips, and the 1/2 cup margarine. Boil for 8 minutes, stirring constantly.

Remove from heat and add the vanilla. Cool completely. Pour over ice cream and return to freezer until time to serve. (We like it without the peanuts, too!)


Butterscotch Cake

Serves 12

1 pkg yelow cake mix

1pkg butterscotch pugging

4 eggs

¾ c water

¾ c oil

Topping

¼ c white sugar

½ c brown sugar

½ tsp cinnamon

1 c pecan pieces


Grease and flour 9"x13" pan. Blend the cake ingredients and mix for 3 minutes. Combine the topping mixture. Spread ½ batter into the pan. Sprinkle with 1/2 the mixture. Spread on remaining batter and top with remaining sugar mixture. Bake at 350° for 40-50 minutes.


Cheesecake

Serves 8

2 sticks butter

¼ c cup white sugar

4 eggs

2 c sifted flour

1 tsp vanilla

1 tsp  salt

1 c pecans, chopped


Grease and flour a 9" X 13" oblong pan. Heat butter and brown sugar until butter is melted. Remove from heat and add all the other ingredients, as listed. Pour into prepared pan.

Bake at 300 degrees for 35-40 minutes. Make sure it's done in the center.


Chocolate Almond Pie

Serves 8

1 graham cracker pie crust, 9 inch

10 oz. marshmallows

6 oz. milk chocolate bars w/almonds

½ c milk

1 c whipping cream


Melt marshmallows, candy and milk. Cool slightly. Fold in the whipping cream. Turn into the pie shell and chill until firm,

3 to 4 hours.

Foolish Pie

Serves 8

3 egg whites

1 c sugar

1 tsp vanilla extract

1 tsp vinegar


Beat egg whites and sugar until still. Add vanilla and vinegar.

Bake in greased pie pan at 300 degrees for 40-45 minutes.

This pie is like a crispy meringue shell. You can fill it with fresh friut and whipped cream or ice cream, or drizzle with chocolate syrup. It's wonderful. -Karen McElveen

Grandma Mac's Peach Cobbler

Serves 8

1 lrg. can sliced peaches 

⅓ c reserved peach juice 

1 stick butter

¼ tsp salt

1 c sugar

¾ c flour

2 tsp baking powder

¾ c milk


Heat oven to 350 degrees. Place butter in a deep baking dish, place in oven and melt. Sift together salt, sugar, flour and baking powder. Stir in milk and mix with spoon until blended.

Pour mixture over the melted butter. DO NOT STIR. Place peaches on top. Pour on reserved peach juice. Sprinkle with nutmeg, if desired. Place in 350 degree oven. When it starts to brown, turn down to 325 degrees. Bake a total of 1 hour.

You can substitute self-rising flour for the regular flour, but then cut the baking powder to 1 teaspoon.

Mandarin Orange Cake

Serves 8

1 box Butter or Orange cake mix

1 c wesson oil

4 eggs

1 can mandarin oranges with juice


Icing:

16 oz. Cool Whip®

1 Irg. can crushed pineapple 

1 Irg. box instant vanilla pudding mix


Mix cake ingredients, using directions on cake mix package.

Bake as directed. Combine icing ingredients and spread on cake. Chill.

McElveen's Butter Bars

Serves 8

1 box yellow cake mix

1 egg

1 stick margarine, melted

8 oz. cream cheese

1 1 lb box powdered sugar

2 eggs


Mix cake mix, 1 egg and melted margarine. Pat into 9"x13" pan. Mix cream cheese, powdered sugar and other 2 eggs with electric mixer. Spread over cake mixture. DO NOT STIR.

Bake at 350 degrees for 30-40 minutes.

No Roll Bottom Pie Crust

Serves 8

1½ c flour 

½ c oil 

3 tbsp milk 

½ tsp salt


Mix together. Add extra milk, if necessary. Press into a 9" pie pan. Top with filling and bake as usual.

This is a super crust for lazy folks like me, who hate to get out the rolling pin!

Nut Butter Wafers

Serves 8

½ c butter, softened

1 c brown sugar, firmly packed

1 tsp vanilla

1 egg

¾ c sifted flour

1 tsp baking powder

½ tsp salt

½ cup pecans, finely chopped


Cream the butter and sugar. Add vanilla and egg and beat until light. Add sifted dry ingredients and nuts. Drop by scant teaspoonfuls onto ungreased cookie sheets. Bake at 400° for about 5 minutes. Remove to cooling racks.

Peanut Butter Ice Cream

Serves 8

½ c butter, softened

1 c brown sugar, firmly packed

1½ c peanut butter

4 eggs

1 lrg can evaporated milk

1 tbsp vanilla

1½ c sugar

¼ tsp salt

milk to fill freezer


Mix peanut butter, eggs, evaporated milk, vanilla, sugar and salt with electric mixer. Pour into ice cream freezer compartment. Fill with regular or 2% milk. Freeze as direc on electric freezer.

This is a family favorite. No July 4th celebration is comlete without it! -Karen McElveen

Pineapple Pie

Serves 8

2 c sour cream

1 sm. can crushed pineapple in juice

1 lrg. box instant vanilla pudding

1 tbsp sugar 

prepared pie shell


Beat at medium speed for one minute. Put into pie shell. Cool in refrigerator

Ice Cream

Poppy's Ice Cream Serves 8

4 eggs

1 pint whipping cream

2 1/2 cups sugar

2 teaspoons vanilla

1/2 teaspoom lemon extract

whole milk


Mix first 5 ingredients. Pour into freezer container. Fill with milk. Freeze as directed on electric freezer

Vanilla Ice Cream

6 eggs

2 tbsp flour

3 c sugar

3 tbsp vanilla (full 2oz bottle)

2½ pts whipping cream

1/2 gal milk


Mix all ingredients together. Add more milk, if needed, to fill the freezer compartment. Freeze as directed on the electric mixer.

I was so excited to make this for Steve for the first time, I brought it for him to taste and he asked if I forgot to add the sugar. I said "I didn't recall sugar in the recipe." Well looks folks, it has sugar. Set up great, just wasn't sweet. -Matt

Ranger Cookies

Serves 8

1 c butter

1 c white sugar 

1 c brown sugar 

2 eggs 

2 c flour 

2 tsp baking soda 

1 tsp baking powder 

1 large bag chocolate chips

½ tsp salt

1 tsp vanilla

2 c corn flakes

2 c oatmeal

½ c nuts


Mix all together. Dough will be VERY stiff. Drop by teaspoon. Bake on ungreased cookie sheets at 350 degrees for 10 minutes. (NOTE: This recipe can be altered to make larger, softer cookies by cutting white sugar to 1/2 cup, leaving out the corn flakes, and cutting the oatmeal to 1 cup and pulverizing it in a blender. Then, bake at 300 degrees for 20 minutes. Makes 3 1/2 dozen large cookies, 8 per cookie sheet.)

Snowballs

Serves 8

2 c flour

1 c butter

1/4 sugar

1 tsp vanilla

1 c nuts, chopped


Cream butter and sugar, then add the other ingredients, Dough will be very stiff. Form into balls. Bake at 300 degrees for 45 minutes. Roll in powdered sugar while warm, then again when completely cool.
